We strive to serve our customers the highest quality fish at Sakana. The highest quality usually means what's in season. These days it’s hard to tell what fish is in season because of the sustainability movement in seafood. But, just like vegetables, fish also have seasons of prime picking/catching. Right now whats in season in Japan and what we are serving in Sakana is:

Asari- Japanese Little Neck Clams

Botan ebi- Shrimp

Hirame- Olive Flounder

Buri- Japanese Amberjack

Hotate- Scallops

Tai (madai)- Seabream

Mirugai- Geoduck

Saba- Pacific Mackerel
